THANK YOU VERY MUCH TO ALL!

My problem was the analyzing-mode. The unusual output makes me insecure.
To use a book.bin in SCID it is necessary to choose a book from the menu "Play->Serious game->Use book". It is possible to use any .bin-book. The SCID folder for the books is "/usr/share/scid/books".

I see the differences with and without a book dramatically if I choose e.g. 120 seconds per move.

But what means the referenced field in the UCI configuration, maybe for other interfaces. Well! For me it is not necessary, my problem is solved!

Stockfish always responds to "go infinite", the UCI command SCID sends in analysis mode, by thinking. It uses its book -- honoring all UCI options in the way I think you expect -- if asked to think with time limits, as in an actual game. Within SCID I think this makes sense: if you want to browse its opening repertoire, just ask SCID to show you the book. If you go into engine analysis mode, Stockfish should show you its own analysis rather than the result of Salvo's. :)
