Would like step-by-step for creating pgn file beginning with originating the file itself. Going to place test positions into it before going to Automatic Analysis.

Well, I don't know Arena, but isn't that done in any GUI by simply saving the games?
Like:
1) Start a new game
2) play the moves in EditGame mode
3) save the game on a file
4) continue to do 1-3, saving on the same file always
That is how I would do it in WinBoard, and I can't see why other GUIs would ever do it differently. Most GUIs must have simple menu items for each of the actions 1-3?
