I have just downloaded XBoard for Mac. It runs well on my MacBook Pro, except I don't know how to run the variant Xiangqi: the button Xiangqi in dialog New variant (open by menu->File->New variant) is disable. Sorry I am still confused. You mean those time controls have no limit on move time? Only add extra time after each move?

Give up on the cheating stuff. Anyone can write an interface to connect to a server, and have an engine look at the game offline and post analysis in a window the player can see. Then the player can use that to choose a move easily enough. Actually I am still hoping since my client side is only app...

You don't need any complicated things such as btree. Few simple lists are enough. The largest chess database (for human games) just around 5 million games, quite small for searching even on an iphone (you can check my apps on AppStore named Banksia chess database). Not sure what you will do in the opposite cases: the weaker (by lucky openings) has a better score in term of evaluation but that position is a draw by EGTB. Should your search return a draw or a lose for the monster?
