I think it should be somewhere in the GUI (not engine) options, but I don't have a recent Shredder GUI.
A workaround could be to set all you need in the baron.ini and then set ucioption to off ...

Unfortunately I did not implement this, despite the message in the release.txt.
I'll produce a new 64-bits version later this week then as well, correcting this omission.

I haven't touched the winboard interface in quite some time so it doesn't support the later additions to the protocol.
