Which are the chess engines written from scratch ?

Dirty, EveAnn, Myrddin, FireFly, iCE, DiscoCheck, ExChess, Tornado, Frenzee, Glass, Arminius (used to be Hermann), cheng and of course GreKo

And what about Crafty, Pro Deo, SmarThink, Gandalf, Fritz, Junior, Hiarcs, Shredder, The King... are they written from scratch too or ...?

I think "written from scratch" is ill-defined.

Crafty was based on Cray Blitz. It was not written "from scratch".
Pro Deo might be based in part on Rebel (I don't know).
Current Fritz is based on Pandix.

My private engine is a rewrite of an earlier engine, so it was not written "from scratch".

There are many more I forgot (excluding those already mentioned):
Texel, OctoChess, old Pseudo and Phalanx, Crafty, Pro Deo, Delfi, Movei, Rodin ...
I think it would be easier to exclude derivatives

Joker and micro-Max / Fairy-Max were also written from scratch. (As are all my other engines, but they do not play orthodox Chess.)

From scratch = started as empty file in text editor. So did Buzz. Pradu is member of Dirty team, I don't get your point
