In my opinion, SF-NNUE got the idea of Anand and NNUE played a more aggressive line planning to ALSO EXCHANGE its R to a N.
Idea of Anand is to play Rd5 exchange sac but black can try to avoid the NxR line which means Anands line is a bit passive compare it
to the plan of SF-NNUE where in this monster is trying to play even more aggressive chess by playing Rf1 then capture with Rxf6. See one of the variation posted above:

See what I mean, Rd5 waits for the N of black to capture it, but Rf1!! of NNUE (found in all alternative lines above) will go and grab the blacks Nf6 itself!!
Check all of the variations above if you don't believe me. In short, NNUEs play is stronger in my opinion.
