How do you know even update fat fritz engine and its net?

The Fritz program would notify you of a program update in most cases. So far there has been one update that I am a aware of for Fat Fritz.

There was comment on Fat Fritz 2 prototype in Chessbase. May be it is NNUE!?

That would not surprise me and it's probably as good a guess as any.

On Windows it is located in the (Hidden) AppData folder:
