Mayhem 5.0 underpromotes ( 71. c8=N ) Then sacks the N and went to checkmate KQvkb.
Mayhem has knowledge about these endgames.

That's not an underpromotion because the knight does something special.

The engine just sees that, if it promotes to a queen, the opponent will immediately take it because BxQ is a good trade for the oppoent. Effectively, white wins 2 pawns of material. If white promotes to a knight, which is probably worth slightly less in your evaluation, it assumes the opponent won't take, as BxN is a bad trade, and thus the gain is a bit more than three pawns.

Very suboptimal play. 71.c8=Q is a mate in 15. Underpromoting to Knight is much worse, although of course it still wins.

The other underpromotions are all also winning, not sure of exact distances but not far off the queen promotion.
Also many queen and king moves. b6 even is #14 or less.

This is tricky because Mayhem only considers underpromotions if they are 3+ pawns better than =Q.
I guess this =N is because of low depth. These were 10s+0.1s games. Mayhem has moveoverhead for increment also. Since 1ns + 100ms. If you use all of the increment you'll lose on time everytime.
That's why I've added all these KQvKB/KQvKN ... heuristics so it doesn't matter.

Letting Mayhem search for a while nice row of c8=Q. Only depth 6 has c8=N which was played in 10s+0.1s.
For such short TC. This was a nice game. Opposite side castling, beautiful king side attack, underpromotion ... :)

There are many games with knight underpromotions giving checkmate or involving knight underpromotions in order to get huge advantages like forks, although it depends on each one to consider them great games or not.

I found a brief collection of games with underprotions at ChessGames:

Underpromotions

I also found two very similar games that shocked me! Knight underpromotions giving checkmate in less than ten moves. Those games were unknown for me:
