Upgrading from 32 bit to 64 bit seems to be walking along a path llittered with
mines waiting to go off.
Would I need to remove XP Home or can I load XP Pro 64 directly on top of
it ?

You can't load XP X64 on top of XP Home. You can operate a dual-boot system though if it is done properly. Best of both worlds then - boot up XP Home when you have to for compatibility reasons, and XP X64 the rest of the time

Since all programs will be at least 64bit within the next five years, you can't go wrong by getting Windows Vista 64bit. I recall the days when everyone was bitching about how bad Windows 95 was compared to Windows 3.11 and DOS 6.22. Those detractors were also full of crap.

PS You will need at least 2 GB of RAM to use Windows Vista 64bit but at least you can use up to 128 GB of RAM instead of the paltry
3 or 4 GB with Windows XP.

I tried Vista, and simply don't like it. I think XP is good, or you could consider downloading a 64-bit Linux OS for free (such as Fedora or Ubuntu) and use the Intel compiler (also free).
I happen to like Vista (comparatively speaking; it is definitely better than XP. I wouldn't try to compare it to Linux and/or MacOS).
The security including parental control features alone make it worthwhile.
While I wouldn't buy it for a machine that already has XP (due to the fact that many older devices have no proper Vista drivers yet), but getting a new one with it already installed shouldn't be a problem.

As I have already told you, XP can support just as much RAM as Vista.
The limitation is in the 32-bit mode, both in Vista and XP.
To take advantage of more than 3 GB you need an 64 bit OS. Vista or XP it's the same.
