I think SF is not relevant here.
Engines are not designed to play well with big odds and by playing well I mean moves that give the best practical chances against humans.
I guess it is easier to beat 1450 engine with queen odd relative to beating humans at the same playing strength.

One idea is to have a giant tree with two moves at each node. And the players alternately pick between the moves presented. The second best move will not lead to a lost game immediately but would take picking the second best move a few times and then only if the other player picked only best moves or they can lose their winning advantage. The data file would be immense but possible in today's environment.
