Or maybe the engine side is right after all, with deeper search... Difficult to say, I would intuitively go for the first option. Interesting to know your opinion on the matter, does anyone by chance have some data (when this is possible to collect, for example, with very short books and castling still available) on which engines would exhibit a higher castling long rate than the average, and if those engines would be among the leading pack?

Castle long or not: that's a tricky question that I often ask myself when playing over the board.
As far as DiscoCheck is concerned, what I can tell you is that:
* it does not distinguish in the evaluation if it is long castled or short castled. in fact it does not even know that. instead it looks at the caracteristics of the position (castling is only one way to reach a position that you could otherwise reach with artificial castling in many moves, but the eval would be the same).
* the eval is neutral with respect to side of castling:
- B1 and G1 are both optimal squares for the King in the opening, as far as the piece on square table (PST) is concerned.
- more generally PST for King is filewise symmetric (both opening and endgame).
- king safety is square agnostic, as far as piece attack goes, and adds more weight to the total attacks on the king based on min(distance to B1, distance to G1). again OO and OOO are equal here.
Yet DiscoCheck plays OOO somewhat less often than OO too. One reason is the loss of tempo Kb1, and another reason is the vulnerability of the King on the queen side.
In fact, I think that DiscoCheck chooses OOO
too easily, and it often backfires. Just after reading your post, I played only one game, and that pattern happenned: DiscoCheck plays OOO and falls prey to a king attack:
