A win for me.
Stockfish went for an early queen exchange, good for me.
I missed 16. Bf5; in an even game that kind of oversight can easily lead to a loss game; here it only costed me a few tempos.

So your results are nearly even with rook odds against top engines (though not Komodo Dragon). How much time are you taking on average per game (time taken by engine doesn't matter, it won't do better giving rook odds with more time than blitz)? I find it quite surprising that you can do this well at rook odds if you are about 1700 level (from memory, correct me if I'm wrong), considering that Komodo Dragon has performed over 2400 FIDE in Rapid at knight odds in about 30 games. Of course a rook is more than a knight, and you are probably playing slower than 15' + 10", and you aren't playing Komodo Dragon, but even so the gap between 2400 and 1700 is just enormous, so it is quite puzzling.

My results are not nearly even. I doing well below 50%
I am not keeping record of the time spent (actually, I think the GUI should do that... perhaps there is an option in BanksiaGUI to save that to the pgn file).
I am playing 15+10.
In some games, I use almost all my allotted time.
In other games, I end with a lot of time in the clock... even over seven minutes.
It depends on how complicated the game gets. If there is an early queen exchange, I usually can play faster without ruining my position.
I am playing Komodo 13.02 64 bit (I think it is not dragon) and Stockfish 15 in this challenge.
As for getting relatively good results, I think I have adapted my style to be more successful in these big-material-odds challenges. I would not play the same way against opponents around my own strength in a rapid tournament.
For example, in these challenges I am not trying to "strike". I am just trying to avoid blunders.
If I get an extra rook (or an extra minor piece) against a human opponent around my strength and he does not resign, of course I try to strike! (i.e. deliver a quick checkmate or win even more material).

So you are playing at same TC as the knight odds matches, and even pre-Dragon Komodo (like 13.02) was performing over 2300 FIDE giving knight odds at this time control, as I'm sure SF 15 would also do, as it is no longer weak at odds play the way earlier SF versions 12-14 were. So it seems that rook odds requires no more than 1800 FIDE to break even with these engines in Rapid, but 2300 + for knight odds! The gap shouldn't be that large. It is normal that the player with the odds should play cautiously if he wants to score; if you are getting knight or rook odds you should expect that your opponent will not overlook anything you can see. I liked my move 18... Nd4, going for piece activity (instead of 18... Nc3, going for simplification).
I made a mistake with 51... Rb6, losing an exchange (so, I was only a bishop up after that), but the position was already difficult for Komodo to save.

Against Stockfish, taking the a1 rook.
¡It was a very exciting game! Both on the board and on the clock.
By move 37, I thought that I had walked into a perpetual. This belief was reinforced because Stockfish made some moves instantaneously.
I was just trying to avoid losing my rook to a queen fork, and getting into an easy perpetual.
When these complications began, I had about two minutes on the clock.
By the time the complications ended, I was playing on the increment.
I think here one can see the difference between an engine and a strong human opponent: the human would have kept trying to deliver a perpetual (there is not a forced one, but I could have easily stepped into one).
At the end of the game, I had again about two minutes; but that is because the last few moves were quite easy.
