Is there an easy way to extract just the PGN from this? I don't want have to type in all the moves to replace the symbols for the pieces.

Just click on square C1 to show the original PGN. Many of the other squares also have special features, such as B1 to get the EPD of the current position. Jeffrey, there is other option for copy and paste the moves from the PGN plugin: just quote Steve's post like if you were to reply to it, and copy all the data between PGN tags. Doing the work for you:
