I think that Paolo's idea is good: changes from 5.5 to 6.5 (or -5.5 to -6.5) are negligible for the expected outcome of the game, but a change from -0.5 to 0.5 (or viceversa) is more significant IMHO.
You can use a sigmoidal function like 1/[1 + exp(-x)]... its range goes from 0 to 1; if you want to change it to values [-1, 1] then you use 2/[1 + exp(-x)] for going to the interval [0, 2], then substracting 1 for getting the interval [-1, 1]. So I propose 2/[1 + exp(-x)] - 1 = [1 - exp(-x)]/[1 + exp(-x)]. Of course you can toy with this function and use 2/[1 + a^(-x)] - 1 (with a > 0) instead of use e. I called x = (evaluation of the engines).
So you can use a linear axis for moves and a special vertical axis: the internal value -1 means black wins, 0 is a draw and 1 is white wins. So if an eval is x < -6.5, then 2/[1 + exp(-x)] - 1 < -0.997 more less, which is very close to -1. If y(x) = 2/[1 + exp(-x)], the engines evaluations x can be written at a height y(x); OTOH, if you know y(x), then x = ln{[1 + y(x)]/[1 - y(x)]}.
