Maybe when the king is castled and you're going for an attack, e5 would look Ok at that point. Now White doesn't have his king castled, nor ready for the fast attack. King side is more or less controlled by Black, and queen side will be dominated as well. So don't really see the point behind e5 now.
I dont even have an ELO, but I think you are right.

Best,
Run the computers a few plys in, say 1. e5..fxe3 2. e6...and see what a fast computer with top software will evaluate after a day.

Yes, if they don't choose e5, make it for them and then see how they see things

Done that, 1. e5..fxe3 2. e6..., now black to move. Have Quad Hiarcs 12.1 on it now, but straight away it doesn't look good - evals -0.79 currently vs +0.77 before, but it is very early days. Will let it run for a while. But I really don't think e5 is the best move here

Best move: e5 with follow-up e6 immobilising black's queen side.

I wonder if this can be solved with todays engines and hardware. Have fun!
Rybka given about 7 hours did not find it. However, the eval is steadily dropping.

Instead of following up with e6, why not take the pawn with the bishop first, and then move e6. At that point, our material will be down one pawn and we will have removed the last remnant of black's pawn shelter. Black will be forced to keep pieces tied up to protect his king.

So at it's best, the e5 move leads to a draw position bearing in mind that you play error free 8-)
Thanks Ray for the cpu time....

It just got a little worse again - I'll leave it overnight. But, my opinion is, based on what I've seen so far, the sacrifice is not the best thing to do

Rybka 3 just gave me a fail high on this position and is doing a research:
[d]rnbq1rk1/pp4bp/3p4/2pPP2n/2P5/2NBp3/PPQ1N1PP/R3K2R w KQ -

I will report the analysis tomorrow.

Maybe an IDEA session will help with this analysis, as the arising position is complex and beyond engines scope. This is just my hypothesis.
