Thanks everyone for your help - really appreciated. I think I will go for the AMD 5950X.
If I do go for this, should I keep hyperthreading on or off in the BIOS? Do people sometimes find a benefit to running more threads than physical cores?
Probably little real difference.
For what it's worth here is a screenshot from mine.
I have to jump in at some point and am thinking I will go with the 5950x as well...might possibly wait for the September (?) release from AMX for some benchmark comparisons...but the Stockfish9 benchmarks clearly show the 5950x to be the better choice over the top Intel 12th generation CPU.

I’m so far away from 110W on my MacBook Pro M1 MAX
The MacBook is cool and quiet and it runs Stockfish 24 hours every day
Stockfish with profile build is more optimized for f*ckbboks M1 than for Dimensity 9000+ CPUs and still, the Dimensity uses only 4w. Why did you buy this power-consuming overpriced mobile chipset from Apple, when there are so much more efficient tiny computers available for chess for less.
The M1 is underperforming other ARM alternatives with its power consumption, applying your faulty logic.
Also, no one should consider (applying stupid watt-logic) the higher-end Ultras and M2s as they draw an extreme amount of performance/watt compared to an M1 Air...
Besides, you are not that far away from 110 W if you measure Watt on a f*ckbook Pro...
Running aztek+Aztec+511MT benchjmark on a Pro 16 sucks 120W (92W package power)..
Stockfish engine is far away from being optimized for Apple M1 devices.
So what OS do you use for chess on this machine?
I mean Apple M1 devices - the hardware not the software.
I’m using macOS for chess and also Parallels Windows 11 ARM for chess.
Why do you need to run Windows 11 on it ? (via Parallels)
Because I wanted to check what is possible with a MacBook Pro 16-inch M1 MAX and MacOS and also with Rosetta 2 and Parallels and Crossover and Homebrew and …
For chess I’m using the macOS version of BanksiaGUI. More than 99% of the time.
But often someone is asking for example: Is it possible to use (Fritz 18) on the new MacBook with M1 chip and I can answer „yes“ and so on.

I got my AMD 5950X system delivered yesterday and I'm really pleased with it. Thanks everyone
I've had my 5900X for about a year and a half, fantastic PC. I'm sure you will enjoy yours. At the time the 5900X and 5950X were in short supply and prices very high, so I settled for the 12-core. No regrets, but today of course the 5950X is the one to go for.
