Which engine to learn from?
Which chess engine offers the most human-like playing style—strong, correct, and principled, but not ultra-tactical or computer-complex—so that a human can realistically learn from its games?

1. Don't use a chess engine: use chess tutorial software
2. I did learn a valuable lesson decades ago - that was from the Fidelity Mini Sensory Chess Challenger, a battery powered dedicated chess computer with an 8 bit CPU. It would always push its pawns. I copied that, and won some games against humans at my (low) level using it. Not sure it would even be possible to learn from today's top engines. I don't play them myself, but my experience of playing human IMs and GMs is that things seem to be OK, and then the sky falls in

I found that Rybka 2.3.2a plays in a way that you mention. Someone once described it as shark like-just waiting for an error before it attacks. You play it everything seems fine and then you are lost and you don't know why. It is very solid. It has been described as boring. It is compared to for instance the chess master series and Fritz 8 (which were my first engines-they were more chaotic and tactical) Rybka can be downloaded for free.
Patricia 5 xtremeEAS is apparently a very aggressive engine but I find at reduced skill levels it is very solid.(At least at my level)
I find in my serious OTC rated games (MY FIDE is just 1650) humans tend to play more aggressive, reckless chess, pawn pushes etc. A style that shouldn't work but sometimes does as I am weak. Hence I tend to play engines (at reduced levels) that play that way.

Try playing Leela queen odds, from the sounds of it at your rating I think you would lose almost every game up a queen.

Or Leela piece odds bot goes up to a queen and 2 rook odds and mostly everything in between.

There is no difference between that Patricia and Patricia 5 when using skill levels, the only difference is it uses the super aggressive net even at full strength. Also Lgp the author hates that name lol

Actually, Practically there was a Hugh difference, the skill level with Patricia 5 did not work, (also Patricia 4 ) at least with Fritz GUI, If I remember correctly this was the case with other GUIs? Other uses mentioned the problem. Although reduced Elo did work, Perhaps this has been fixed recently? There is nothing different besides using the aggressive net.
