I believe it may have to do with a special technique Fritz uses, making use of the MMX cpu registers (or what's that called?), for the bitboards. That is why alternative "NoMMX" versions of Fritz existed for 6, 7 and maybe also for 8, to run if the user has an old cpu without MMX capability still. I am not an expert of this topic but couldn't that be a reason to not create a 64 bit version?
I am only speculating. - Actually, I can also imagine that they think it just isn't wortwhile yet, to invest developement time in a 64 bit version because they estimate the share of users/buyers is very small still, compared to 32 bit buyers who don't care for such "tech stuff"... IOW. the Chessmaster approach, something like "Enhance/optimize the features 95% are interested in, ignore the features only 5% are interested in."
